Buttercream frosting is a classic cake topping that is made by whipping butter and powdered sugar. But what if you don’t have a cake mixer? Can you make vanilla buttercream frosting in a high-speed blender? The answer is yes! You can make fluffy frosting in just minutes using the Vibe Blender System. This smooth blender vanilla buttercream frosting is the fastest way to decorate and fill your cakes and cupcakes and bonus, the method comes with a simple clean up.
It’s essential to use powdered sugar, also known as icing sugar. It’s very fine and will dissolve easily into butter without becoming grainy. If you don’t have powdered sugar, you can actually blend granulated sugar in the Vibe Blender System on nut mode for 20-30 seconds or until it reaches a fine powder. Make sure the jug is completely dry before you begin. If your powdered sugar is lumpy, sifting it first ensures a smoother texture and less time running the blender.
The butter must be super soft but not melted. If the butter is too firm when you blend you will have to open the jug and scrape down the sides several times throughout the process. To soften chilled butter, slice the butter into thin pieces and leave in the sunshine for 30-60 minutes depending on the time of year. Alternatively, put it in the microwave on defrost. If a small amount of the butter melts in this process it will be ok however melted butter will not produce buttercream.
Start blending the ingredients on a low setting to avoid the butter splattering and the fine sugar dust going up inside the blender jug lid. Gradually increase the speed to medium until the mixture is light and fluffy. The Vibe Blender System is powerful, so avoid overworking the frosting. If the jug becomes warm it may melt the butter and spoil the frosting.
If you’re planning on piping cupcakes or decorations, stiffer frosting holds its shape better. Fill a piping bag with the frosting then place the bag in the fridge for about 10 minutes to stiffen the butter.
Buttercream will only last 2 days at room temperature. If it’s a hot environment it may sweat or melt. Buttercream frosting will set firm in the fridge and last up to one week.
Makes enough buttercream to fill and coat one large cake. The quantity can not be adjusted.
